Buffalo Chicken Hash Brown Bowl

Bowls are popular for a reason—they’re the easiest way to combine a variety of flavors in a fun and easy format. This recipe combines Idahoan® SHREDS Fresh Cut Hash Browns with cooked chicken, carrots, and celery into one well-rounded dish – but just because there’s a perfect balance of protein and veggies doesn’t mean that it’s boring. Topped with a buffalo ranch sauce that makes all the flavors pop, this is an easy-to-make entrée that is sure to satisfy.

Ingredients
  • 3 cartons (2.125 lb) Idahoan® SHREDS Fresh Cut Hash Browns with Seasoning
  • 3 cups buffalo sauce
  • 4½ cups low-fat ranch dressing
  • 36 cups shredded cooked chicken
  • 36 cups chopped romaine lettuce
  • 18 cups matchstick-cut carrots
  • 18 cups thinly sliced celery
  • 72 whole grain rolls
Instructions
  1. Prepare hash browns according to package directions, baking in oven to brown.
  2. Stir together buffalo sauce and ranch dressing until blended.
  3. Serve ½ cup hash browns in each bowl. Top with ½ cup chicken, ½ cup romaine, ¼ cup carrots and ¼ cup celery. Drizzle with 2 tbsp buffalo ranch sauce. Serve with whole grain roll.
Notes
Tip: Add avocado and crumbled blue cheese to the salad for a fully loaded bowl.
