Grilled Vegetable Mashed Potato Bowl
- 1 bag (32 ounces) Idahoan® CREAMY Buttery Homestyle® Mashed Potatoes (Prepared according to hot water instructions)
- 1 gallon Hot vegetable stock (Vegetable stock should be between 180°F to 190°F)
- 3 pounds Mixed Vegetable Blend (Fresh or frozen)
- 4 ounces Vegetable oil
- 2 ounces Salt-free seasoning
- Measure 1 gallon hot, not boiling, vegetable stock into a large bowl.*
- Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
- Place the vegetables onto a sheet pan. Coat with oil and seasoning. Bake at 400°F until roasted, about 20 minutes. Hold for assembly.
- To assemble, place 4 ounces of the mashed potatoes into a bowl and top with 3 ounces of the roasted vegetables.
