Harvest Vegetables & Mashed Potatoes
- 1 carton (4.69 pounds) Idahoan® SMARTMASH® Very Low Sodium Dairy-Free Mashed Potatoes (Prepared according to hot water instructions)
- 3 gallons Hot water (Water should be between 180°F to 190°F)
- 2 cups Vegetable oil
- 2 ounces Italian seasoning
- 8 pounds Vegetable medley (Carrots, brussels sprouts, red onion, and bell peppers)
- 2 cups Vegetable stock (Heated)
- Measure 1 gallon of hot, not boiling, water into a large bowl.*
- Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
- Combine the vegetable oil and Italian seasoning. Toss the vegetables in the seasoned oil and place onto a sheet pan. Roast at 400°F until browned and tender.
- Place the vegetables onto a hotel pan and add the hot vegetable stock to retain moisture.
- To assemble, place 4 ounces of the mashed potatoes into a bowl and top with 4 ounces of the freshly roasted vegetable mixture.
