Rustic Russets Mashed Potatoes & Tofu Curry Bowl

Ingredients
  • 1 bag (28 ounces) Idahoan® RUSTIC Russets Mashed Potatoes (prepared according to hot water instructions)
  • 1 gallon hot water (water should be between 180°F to 190°F)
  • 2 ounces vegetable oil
  • 2 pounds stir fry vegetable mix (thinly sliced)
  • 6 ounces Thai curry paste
  • 1 pound firm tofu (cut into ½ inch cubes)
  • 2 quarts coconut milk
Instructions
  1. Measure 1 gallon of hot, not boiling, water into a large bowl.
  2. Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
  3. Place the vegetable oil into a skillet and heat, add the vegetable mix and stir fry until softened. Add the curry paste to coat all of the vegetables and lightly toast brining out the flavor.
  4. Add the tofu to the curried vegetable mix and warm through. Add the coconut milk and simmer, so as to not break up the tofu completely.
  5. Serve the curry over six ounces of Idahoan® CREAMY Classic Mashed Potatoes.
